Can a guy live on just appetizers alone? I’m going to find out. Over the next couple weeks, I’m preparing, eating and, ‘surviving’ on appetizers, nothing but.
Today for lunch, I had mini BBQ meat balls made in the crock pot.
Did they fill me up? Yes, quite nicely and I should hope so, it was a 1/2 pound of beef! No side dish though, just the meat balls. I could have dressed them up ‘appetizer’ picture perfect with toothpicks, they were mini-meatballs after all, but I just plated ’em and used a fork.
This meal cost me about $3.25 to prepare and having that work day lunch ready in the crock pot was quicker than getting drive thru at a fast food restaurant.
Mini BBQ Meat Balls
Ingredients:
- 1/2 ground beef
- 1 teaspoon dried, minced onion
- 1 teaspoon seasoned salt
- 1/2 teaspoon black pepper
- one egg, beaten
- 1/3 cup Italian seasoned bread crumbs
- 1/3 cup of your favorite BBQ sauce
Directions:
Turn the crock pot to the low setting and pour in the BBQ sauce. In a large bowl, mix all remaining ingredients and form mixture into mini-sized meatballs. Brown the meatballs in a frying pan over medium heat, about 2-3 minutes, then put in the crock pot and let those babies mellow in the BBQ sauce for about 4 hours.
