Can a guy live on just appetizers alone? I’m going to find out. For the next couple weeks, I’m going to prepare, eat and, ‘survive’ on appetizers alone.
It’s breakfast time and I love eggs. On the menu, Baked Scotch Eggs.
If you don’t know what a Scotch egg is, it’s a hard-boiled egg wrapped in sausage, coated in bread crumbs and then baked or deep fried.
It’s a popular bar food in British-style pubs and it’s even served on a stick at some state fairs.
Complimented with a little Ranch dressing, these things are quite tasty and who ‘da thunk I could get eggs and sausage in an appetizer breakfast huh?
And from a budget perspective, this was a Bachelor on the Cheap friendly meal. I got the sausage for $2.99/lb., a dozen eggs for 99 cents and a container of Panko bread crumbs for $1.59. In breaking that down to make two Scotch eggs, the meal cost me no more than about $2 to prepare.
Baked Scotch Eggs
Ingredients:
- 1/2 pound pork sausage
- 1 teaspoon dried minced onion
- 1/2 teaspoon salt
- dash of black pepper
- 2 hard-boiled eggs
- a small scoop of all-purpose flour
- 1 egg, beaten
- 1/3 cup Panko bread crumbs
Directions:
Heat oven to 400 degrees. In a large bowl, mix pork sausage, minced onion, salt and pepper. Shape into two thin patties. Place a hard-boiled egg on a sausage patty and shape sausage around egg. Roll the covered egg in the flour, then dip in the beaten egg to cover, then roll in the bread crumbs to cover. Repeat to make second egg. Place on an ungreased cookie sheet and bake for 35 minutes or until sausage is cooked through.
