I need to start eating salad for breakfast.
In my attempt to get some veggies in for the day, I went with a HUGE garden salad for dinner, I also did it because my sodium count for the day was a bit high from consuming Little Smokies AND hot dogs. Two processed meats in one day, a bit of a no-no. The problem with eating a salad for the last meal of the day though is the carb count. The tomatoes, cucumbers, red cabbage, carrot, red onion, and lettuce are all good nutritionally and low in sodium for sure, but I’m not paying attention to my own advice given earlier in this challenge, and that is to eat the bulk of your carbs earlier in the day (and stay away from the convenient hot dog).

The day was low on calories, but I didn’t go to bed feeling hungry. The protein count was too low (goal: 100+ grams per day), but the carb count was pretty much on point (goal: No more than 60 grams per day).
I need to introduce some variety in the menu, I’ve been a bit too focused on “cleaning up” leftovers and what’s been opened in the fridge. I need to freeze more of those leftovers to enjoy another day down the road and bring in more variety.
With low-calorie counts, exercise, drinking plenty of water, and an overall reduction in carb intake by going gluten-free, weight is being lost. But can I maintain this regimen? A plus for motivation: This diet is NOT expensive. I’m saving money at the grocery store. There’s no need to go through the bakery aisle, I’ve greatly reduced what I put in the cart from the chip aisle now, and while gluten-free crackers are tempting, they’re not a priority buy.
