Signature dishes, it’s food that embodies a region, it’s a celebration of iconic cultural flavors, where natives and tourists alike embrace that bowl, that plate, that sandwich, that finger food and say, “You HAVE to try this!”….
Examples of iconic signature dishes includes the Rueben sandwich in New York; crab cakes in Baltimore; The Philly Cheese Steak in Philadelphia; Fried Chicken in Atlanta; Deep dish pizza in Chicago; Bratwurst in Milwaukee; Gumbo in New Orleans and Cedar plank Salmon in Seattle.
So with all that iconic food in mind, does Wichita have a signature dish, or is the Mid-Continent City a melting pot of foods and flavors?
Having fun and inspired by this Signature Dish Challenge, I decided to visit Bionic Burger which has been deliciously serving Wichita since 1977.
I sauntered in just after 5pm on a Saturday. There were a few patrons inside, but a line of three or four cars in the drive through.
I was greeted right away by a smiling lady behind the counter.
SMILING ATTENDANT: Welcome to Bionic Burger are you dining in or will your order be carry out?
ME: Carry out please, what is your best selling burger?
SMILING ATTENDANT: Oh, the Mushroom Swiss is a top seller and so is the Bacon Cheddar and then there’s always the single cheeseburger.
Bionic Burger Combo Meal
ME: I’ll take the Bacon Cheddar Burger Combo
The smiling attendant went over the condiment choices, side choices and asked if I wanted a single or a double burger. I went with a double burger, onion rings and a medium drink.
So, how was my Bacon Cheddar Burger you ask?
There is a reason Bionic Burger has faithfully served Wichita since 1977, they make damn good burgers!
The Bacon Cheddar Double Burger I ordered delivered BIG on a time-tested classic combination of burger flavors. The meat to bun ratio was spot on, the two quarter-pound patties of beef were juicy, I got bacon in every bite, the cheddar cheese was melted to perfection and the toppings brought everything together creating one delicious bite after another. I would put this burger up against any other in a bacon double cheeseburger showdown!
The onion rings, not to be slighted, were also delicious. They were perfectly seasoned, crispy on the outside and tender on the inside.
The Bacon Cheddar – Bionic Flavor!
My combination meal cost me just over $10 and I was in and out of Bionic in about 5 minutes. Bionic Burger gets five out of five Metro Pursuit stars. The service was stellar and the restaurant is truly an icon of the Air Capital. If burgers do indeed turn out to be Wichita’s Signature Dish, Bionic Burger gets a seat in the front of the class. Bionic Burger has been a repeat buy since 1977.

Don’t go to McDonald’s, go to Bionic Burger instead.
Don’t go to Wendy’s, go to Bionic Burger instead.
Don’t go to Burger King, go to Bionic Burger instead.
But my search has only just begun…. I’ll be visiting a large variety of restaurants and sampling all types of food, getting input from patrons and restaurant gurus alike, trying to get a feel for what Wichita’s Signature Dish might be….. Oh, and national chain restaurants will NOT be a part of this challenge, I’m keeping it as local as possible, a true evaluation in finding what might be Wichita’s Signature Dish.
