Signature dishes, it’s food that embodies a region, it’s a celebration of iconic cultural flavors, where natives and tourists alike embrace that bowl, that plate, that sandwich, that finger food and say, “You HAVE to try this!”….
Examples of iconic signature dishes includes the Rueben sandwich in New York; crab cakes in Baltimore; The Philly Cheese Steak in Philadelphia; Fried Chicken in Atlanta; Deep dish pizza in Chicago; Bratwurst in Milwaukee; Gumbo in New Orleans and Cedar plank Salmon in Seattle.
So with all that iconic food in mind, does Wichita have a signature dish, or is the Mid-Continent City a melting pot of foods and flavors?
Having fun and inspired by this Signature Dish Challenge, I decided to visit Two Brother’s BBQ…… This is the 2nd of 14 local/regional BBQ joints on the list to evaluate.
I pulled into the parking lot shortly after 5pm, and there were just a few cars in the parking lot.
“Not a good sign,” I thought to myself. “But it’s early, 6pm is closer to dinner time for a lot of folks.”
I walked in and was greeted with smiles and hellos.
Having already reviewed their menu online, I pre-determined I wanted the two-meat dinner. I would have ordered the three-meat, but such a dinner is not listed on that menu. I ordered ribs and hot links, with sides of scalloped potatoes and fried okra. One of the ladies working on my to-go order stepped into the kitchen to drop the okra in the fryer, ‘gotta love that!
ATTENDANT: What kind of sauce would you like?
ME: What kind do you have?
She rattled off the names and I went with the ‘Sweet & Sassy.’ I like the fact that this BBQ joint gives you sauce options, rather than just limit you to a single run-of-the-mill house sauce.
As my ribs and hot links were sliced up and the potatoes were portioned out, I reviewed the menu.
ATTENDANT: Did you want bread to go with your order?
ME: What kind do you have?
She rattled off some varieties of sliced bread. Like having a sauce option, it’s also nice to have a sliced bread option. I went with the classic, white bread. That’s two bonuses to go with this meal!
And back to that menu… They do have a three-meat option! I was wondering why they have that option in the restaurant but don’t offer it online when the other lady working on my order came out with the freshly fried okra and starting ringing things up.
ME: What is your best seller?
ATTENDANT: We sell a lot of brisket and pulled pork, but the hot links and ribs are popular too.
ME: Good to know.
I paid for my order, considered ordering up some pulled pork but decided on trying that on another visit. I had more than enough food in my two meat dinner. By the way, the aromas were KILLING me on the drive home!
Two Brothers BBQ Two Meat Dinner
My meal cost a bit over $12 and it was VERY satisfying. The ribs were moist and tender, the hot links had a really nice subtle kick to them and a nice snap in the casing with each bite. The scalloped potatoes were spot on, a really nice, creamy, well seasoned and cheesy side to compliment the meats, but the okra – I love fried okra and this was the best of the two sides – perfectly done! And that ‘Sweet and Sassy’ sauce was excellent, having a little twang to go with the sweet notes.
Two Brothers BBQ scores four out of five Metro Pursuit stars, the two meat dinner I ordered is definitely a repeat buy, but I’ll be going three meat on my next visit! This restaurant is a fine representation of BBQ for the city of Wichita.
The Two Brother’s BBQ visited is located at: 300 S Greenwich, Wichita. This is the location where Two Brothers got its start. It’s a cozy place, beer and TV are nice options when dining in. The service was courteous, fast and the place was clean.
But my search has only just begun…. I’ll be visiting a large variety of restaurants and sampling all types of food, getting input from patrons and restaurant gurus alike, trying to get a feel for what Wichita’s Signature Dish might be….. Oh, and national chain restaurants will NOT be a part of this challenge, I’m keeping it as local as possible, a true evaluation in finding what might be Wichita’s Signature Dish.
