Day 14, is the two-week mark for this diet.   I’m sticking with it, feeling good.

A two-week review

I have not strayed from eliminating wheat products from my diet, I haven’t consumed any.  I’ve been reading product labels, cooking thoughtfully at home, purging my fridge and pantry of items with gluten, sampling some GF alternative products, ordered carefully when dining out.

This process has naturally, for lack of a better word, eliminated around 400-600 calories a day from a traditional diet that included regular bread, pasta, crackers, and such in the daily menu.  The elimination of those things, combined with a more selective use of GF alternatives, lends itself to a reduction in carbs.

With that, in my attempts to eat the bulk of my carb grams earlier in the day, the thought being the earlier the better, allowing the body to burn off those carbs with daily activities, it hasn’t always worked out that way.  Take Day 14 as an example, I ate the majority of my carbs in the afternoon snack and evening meal.  I need to flip-flop that.  What I need to do is pretty much flip meal tradition.  Breakfast is my favorite meal of the day, I love eggs, meat, and cheese, complimented by a cup of coffee.  But since eliminating bread, that is now my lowest-carb meal of the day.  I must make a menu change, the last meal of the day, and breakfast for dinner!

The afternoon snack featured Simply Nature Black Bean Chips, very tasty with cottage cheese.

The evening meal was highlighted with salmon and mixed vegetables, complemented with a garlic cream sauce.  The sauce is really simple to put together, sauteeing a Tablespoon of minced garlic, salt, and pepper in a tab of butter over medium heat, then adding 1 cup of heavy cream and 2 heaping Tablespoons of Parmesan cheese.  Stir constantly until the sauce starts to come to a boil.  Take off the heat, serve immediately. Some fresh, chopped parsley is a nice add.

On an excellent diet day, I consumed 1,397 net calories, 135 grams in protein (goal, at least 100 a day), and just 46 grams of carbs (goal, no more than 60 grams).  

Tomorrow is Day 15, a weigh-in day.  Stay tuned!
