Wow, it’s been 13 days already?!
This diet is going well. There are no hunger pains between meals, I’m enjoying the foods I’m consuming, and while I’m still tweaking the nutritional balance, I’m really not missing the wheat products. It’s like the longer I go with this, the easier it gets. And here’s a bonus to this approach: Eliminating bread, etc., and those calorie/carb counts, allow you to expand on the other foods and flavors you eat, but perhaps didn’t eat a bit more liberally before for fear of driving up the calories. Instead of adding a splash of milk to my scrambled eggs, for example, I started using heavy cream for a richer taste. Eliminating toast and jam with breakfast, I can have chips and a sour cream-based dip for a snack later in the day and not feel guilty about it. There’s no starving and the food options are many, despite the lack of wheat products. I’ve only begun to explore the variety of foods available in maintaining a gluten-free diet. I’ve repeated items on the menu only because it’s what I shopped for and still have on hand, or otherwise really enjoy a particular product, except those Cassava Chips, which I will NOT be buying again… And here’s another NOT RECOMMENDED gluten-free product,
Here’s the Day 13 Menu:

It was another day of primarily avoiding anything wheat, rather than sampling GF foods or reviewing a restaurant. A friend of mine has a gluten-free pizza crust that sounds really good and I’m looking forward to trying that once I get my hands on a copy.
Eating this way is also saving money at the grocery store. The purchases of regular bread, pasta, crackers, and such are gone. There are the occasional GF alternative purchases for pasta, and crackers (I still can’t justify the price of GF bread), but the elimination of wheat products from the grocery list far outweighs the money spent on GF products and the extra steak I might buy on my weekly shopping trips.
Tomorrow is a weigh-in day, stay tuned!
