Day 11, another eat-at-home day, another day of staying gluten-free primarily through abstention, which I’m totally fine with. I’ve had a few cravings for regular bread, but overall, I haven’t had any urges to stray from the diet.
The only gluten-free promoted product I had today was a snack of those Cheddar Cheese Rice Cakes I like so much. It’s a nice pairing with cottage cheese, a little dollop of the cottage cheese on top of a rice cake delivers a tasty, chip & dip kind of experience.
My breakfast was healthy, a banana along with some mixed nuts, no kitchen cleanup! But I will say despite the potassium benefit from the fruit, bananas are too high in carbs for my liking and there are other potassium sources out there to enjoy with lower carb counts.
Here’s the Day 11 Menu:

The only unhealthy item consumed were the all-beef hotdogs, the last two from a recent batch cook. They’re a tasty bite but no longer on future menus on a regular basis. The highlight of the day was the Parmesan Crusted Tilapia. The recipe is simple. I lightly scrambled up an egg with black pepper, onion powder, and garlic powder. Ran the fillets through that. Then dredged the fillets in the Parmesan cheese, which I doctored up with that same combination of black pepper, onion powder, garlic powder, and the addition of a dash of Cayenne pepper. It’s all about creating depth of flavor. I pan-fried the fillets in canola oil for about 2-3 minutes per side until they were golden, brown, and delicious. I hit them with a pinch of salt right after the fry.
Frozen Tilapia fillets are cheap eats too, a 16-ounce bag was just $5.69 at Aldi.
