Breakfast is my favorite meal of the day. It’s also my biggest meal, giving me the protein base I need for the activities I’ll do from sunrise to sunset. There’s also something to sitting down to a nice breakfast, a cup of coffee and listening to the news – getting the day rolling.
In doing this diet, I’m trying to keep my carb count below 60 grams per day. That can be tough to do when sampling and reviewing meals at area restaurants for posting on BachelorontheCheap.com. On those days, I often skip breakfast, which probably isn’t the healthiest thing to do, but it does help keep me on track with the carb count. Despite the occasional restaurant reviews, I’ve dropped 16 pounds so far this month.
This morning’s at home breakfast was simple, but tasty. I scrambled a couple of eggs, added some Mrs. Dash, a splash of whole milk, a sprinkle of Mexican blend shredded cheese, some fresh garlic. I also had three turkey sausage links. That’s it, very satisfying and for you calorie counters out there, if you add in my coffee w/honey and cream, we’re talking about 545 calories. It only took me about 10 minutes to prepare.
For the remainder of the day, I’ll have a fresh fruit snack before lunch, a salad with some grilled chicken for lunch, a nuts and seeds snack in the afternoon, and I’m not sure what my plans are yet for dinner, I’ve got some shopping to do. Note the lack of breads or pastas from the menu. That’s a good thing, as I get all the fiber and carbs I need from fruits, vegetables, nuts and seeds.
