Layers of breakfast flavor in each bite!

It’s a beautiful Sunday morning, the sun is shining and the birds are chirping!  Before I head outside to do some yardwork, I need some breakfast.

Enter, Bachelor on the Cheap Little Smokies Hash with an Egg Over Easy.

I love breakfast hash and the beauty of it it you can use just about any kind of chopped meat, dice up or shred any kind of potato, be it russet, purple, sweet, then throw in some onion and it’s a great one-dish wonder that’s big on flavor.

Ingredients:

  • One medium potato, boiled, shredded (this is an opportunity to use leftovers, a leftover baked potato works great too and yes, even french fries)
  • 6-8 Little Smokies, chopped
  • 1/2 medium onion, diced
  • 1 Teaspoon black pepper
  • 1 Tablespoon butter
  • 1/2 Tablespoon olive oil
  • Juice from 1/2 a lime
  • One egg
  • Salt and pepper to taste
  • One green onion, chopped (garnish)

Directions:

Heat a large skillet over medium heat.  You want to use a large skillet to really spread out that potato to get it all golden, brown and slightly crisp.  Drop in the olive oil and butter and once heated, throw in the potato and hit it with the lime juice, salt and pepper.  Cook for a good five minutes and flip once the underside is golden brown.  Toss in the onion and Little Smokies.  Cook for another five minutes.  Flip to one side of the skillet and top with cheese, drop in the egg and turn down the heat to medium low.  Once the egg sets up (a minute or two), flip gently and cook for another minute.  Plate the hash, top with the egg and garnish with the chopped green onion.  Salt and pepper to taste.  Serves one.

Costing about $1 per serving, this breakfast hash is Bachelor on the Cheap easy on the wallet, easy to prepare and OH-SO tasty!  It’s another dose of YUM!
