The lockdown of 2020 changed the way the restaurant industry operates forever. While the changing landscape has presented many challenges, it has also given birth to new and innovative concepts. 

When the opportunity arose in Wichita to bring to life a new concept, career restaurateur Joseph Castillo knew exactly how to adapt a lifelong dream into a current day reality. With the help of some friends who were born and raised in Wichita, DŌMA was born. 

With over 20 years of restaurant experience, Joseph has worked in some of the most high end culinary destinations in Los Angeles, San Diego and Phoenix. His time working in modern American steakhouses provides a background to the action. Classical French training set the tone for the techniques his Mexican roots needed to produce bold Latin flavors while being enhanced with the precision his Japanese training provided.

The main dining room features views of the open kitchen and sits alongside a fully stocked bar sitting beside an expansive lounge that stretches the length of the building. The cocktail lounge features comfortable couches and lounge furniture complimented by eye catching murals accenting the 25 foot ceilings with wood trusses. Seating is communal, allowing for gatherings from 2 to 20.  Tucked away in the back hides a private dining room that can host up to 25 guests. Just outside the cocktail lounge, an expansive outside patio provides a fantastic gathering space featuring fire pits, yard games, as well as TV’s showing the local game. 

The food screams “share me!” Large enough to share, yet small enough that a couple can easily order 4 to 5 dishes with ease. A format that allows our guests to customize their experience from one day to the next. A modern take on American fare is accented by Latin flavors and Asian influences. The menu is dotted with bold flavors such as miso, toasted dried chiles, citrus and local honey. Vegetarian and vegan options play complement to house smoked meats and seafood and have the potential to steal the show. DŌMA strives to be the first option for groups that include many different preferences and dietary restrictions. 

DŌMA’s goal is to provide Wichita with a unique gathering space where everyone can find a place to sit and enjoy whether in the dining room, cocktail lounge, or on the patio enjoying themselves 16 oz. at a time.
