Cottage bacon is a fantastic cut of meat packed with flavor, it’s an excellent change of pace meat, a great way to cure your meal doldrums… Yes, pun intended…. ‘cure’….  That it’s so under utilized should be considered a meat crime.

If you’re not familiar with cottage bacon, it’s cured pork shoulder, sliced thin. It’s leaner than bacon and the flavor elements carry both ham and bacon notes. It fries up really well without shrinking too much and it’s great for breakfast, lunch or dinner. Also excellent prepared on the grill, it’s fantastic with eggs, excellent on a sandwich, pairs really well with potatoes.

You can use cottage bacon in just about any recipe that calls for bacon, you can use it in just about any recipe that calls for ham, it’s SO versatile, especially so with those crossover flavor notes.

Desiring some candied bacon today and forgetting to pull a package of bacon out of the freezer last night to thaw out, I reached in the fridge and pulled the cottage bacon I had on hand and at the ready…

“Hell yes, this’ll work!”  I said.

It’s Another Dose of YUM!

Here’s a quick and easy recipe for candied bacon, it’s delicious, delivering sweet and savory notes.  Eat it by itself, yes, like candy! Better yet sprinkle some on a salad, use it as a topper for a bowl of oatmeal and it’s AWESOME on a bowl of vanilla ice cream!  Also quite excellent with a Bloody Mary.

Candied Bacon

Ingredients:

  • 10 – 12 slices of bacon or cottage bacon
  • Light brown sugar
  • Montreal Steak Seasoning or your favorite steak rub
  • Cayenne pepper (optional)

Directions: 

Preheat the oven to 350 degrees, line two cookie sheets/trays with parchment paper.  This is a Bachelor on the Cheap measurement thing, you season to taste, hence, no specific measurement in the ingredients list…  Make it how you like it, sprinkle some brown sugar on the bacon.  You want it to taste really sweet like candy, add more brown sugar.  You want the bacon to be more savory, add more steak seasoning (be careful though, don’t add too much or it will get too salty).  Want more kick?  Add more Cayenne pepper.  I like sweet heat, the brown sugar plays real well off the Cayenne pepper.  The pic visual above gives you an idea, just sprinkle your way to happiness.  Bake in the oven for 20 – 25 minutes until crispy as you like it.  Pull the tray from the oven, placing bacon on a cooking rack or cutting board.  Do NOT put the bacon on a paper towel, it will stick.  Let rest for five minutes, then slice, dice to your liking.
