Christmas Cookie Making

It’s a perfect cookie. With a light, crackly crust coated in powdered sugar on the outside and a soft, tender/chewy rich fudge brownie taste on the inside, what’s NOT to love? It’s a classic Christmas cookie, but not because of it’s shape, fancy icing or decorative garnishes. No, these cookies are popular because of their simplicity and most importantly – the FLAVOR!
No cookie cutter required
Ingredients:
- 1/2 cup butter, softened
- 1 2/3 cups granulated sugar
- 2 teaspoons vanilla extract
- 2 eggs
- 2 squares (1 ounce each) unsweetened baking chocolate, melted
- 2 squares (1 ounce each) semi-sweet baking chocolate, melted
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon Kosher salt
- 1/3 cup milk
Directions:
In a large bowl, cream the butter, sugar and vanilla extract. Beat in eggs (one at a time) and the melted chocolate. Add the flour, baking powder and salt alternately with the milk. Chill the dough for at least 3 hours. Preheat the oven to 350 degrees. Form into 1 – 1 1/2 inch balls, then roll in powdered sugar. Place on a greased cookie sheet about 2-3 inches apart. Bake for about 15 minutes. Allow to cool on the cookie sheet for a couple minutes before transferring to a wire rack. Makes about 36 cookies depending on the rolled dough size.
