I love recipes that are simple to put together, yet pack a boatload of flavor and texture!
This is one of those recipes.
Roasting tomatoes in the oven brings out a richer, deeper tomato flavor. Combined with the ooey-gooey melt of mozzarella and the light crunch of the panko bread crumbs it’s a truly delicious bite!
Ingredients:
- Three Roma tomatoes, sliced, about 12 slices.
- Three slices of Mozzarella cheese, cut in quarters
- 1/4 cup of Panko bread crumbs
- a drizzle of olive oil
- a tab of butter
- 1/8 teaspoon garlic powder
- 1/8 teaspoon onion powder
- 1/8 teaspoon Italian seasoning
- Salt and pepper to taste
Directions:

Excellent snack, appetizer, or even a side.
Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper. Placed sliced tomatoes on the cookie sheet, drizzle with olive oil, hit them with some salt and pepper. Top each tomato slice with cheese. Bake in the oven for about 8-10 minutes. While the tomatoes are getting happy, melt the butter in a small saucepan over medium heat, add the bread crumbs, garlic powder, onion powder and Italian seasoning. Stir to coat and mix thoroughly. Remove from heat. Top the tomato slices with the bread crumb mixture and bake for another 5 minutes. Serve immediately.
It’s Another Dose of YUM! And in addition to packing a boatload of flavor and texture, this is a cheap snack or appetizer to make. The total cost for this ran me about $1.50.
