Pizza is without question, my favorite food. Pretty much anything grilled is next on my list.
I prefer to make my own pizza from scratch, but when I don’t have time to crank out some dough and make some sauce, I usually have a frozen pizza or two in the freezer. Pizza rolls serve as nice alternative, but that got me to think’n….
Pizza hack!
History: The pizza roll was invented in 1967 as a spin from the egg roll, a way to ‘wrap up’ pizza ingredients rather than cabbage, carrots, onion and some meat. Totino’s is the most popular pizza roll brand out there, with over $600 million in annual sales.
But those pizza rolls are just too tiny! I want an egg roll sized pizza roll! Unfortunately, for whatever reason, such a thing that tastes good isn’t available in the frozen food section of the grocery store. Hot pockets suck. All you can get are those tiny little things, even the discount and private label makers of pizza rolls stick to that snack size. Why?
Enter my pizza hack, Bachelor on the cheap pizza rolls!
Ingredients
- Egg roll wrappers
- Pepperoni (or your favorite meat topping, a pepperoni/pre-cooked sausage blend rocks!)
- Mushrooms, sliced (optional, use your imagination, onions, black olives, green pepper, etc.)
- Pizza sauce (jar sauce is convenient, scratch made is better)
- Mozzarella cheese, shredded
Directions
Heat up a large pan with vegetable oil over medium high heat. In a medium size bowl, mix the pepperoni, mushrooms and pizza sauce together so you can easily spoon the mixture onto the egg roll wrapper. Wet the edges of the egg roll wrapper (this will help create a seal) with water using your finger. Sprinkle some shredded mozzarella on the wrapper at a diagonal (that means corner to opposite corner for those of you who live in Valley Center), top with pizza topping mixture, then sprinkle another thin layer of mozzarella on top of the filling. Fold the two opposing edges on the diagonal of the egg roll wrapper in toward the center, sealing the fold not touching the toppings. Then tuck and wrap the roll like a burrito. Drop the roll into the hot oil and fry until golden, brown and delicious. Hit with Parmesan cheese right after taking the rolls out of the oil and serve.
